Nam Prik Ma-Kham (Chili Sauce with Tamarind)

Tamarind is a main ingredients for many Thai dishes and one of these dishes is Nam Prik Ma-Kham. Made from young tamarind, shrimp paste, chilies, garlic and minced pork, it is served with vegetables.


Nutrition

Tamarind is high in vitamin C which is good for the excretory system. Vegetables contain vitamins and minerals which are good for immunity.

Ingredient

100 grams young tamarinds
250 grams minced pork
70 grams bird eye chilies
5 each garlic cloves
2 tbsp. Thai shrimp paste
100 grams palm sugar
1 tbsp. fish sauce
½ tsp. salt
3 tbsp. water


How-to

1. Peel and clean the tamarind. Put the cleaned tamarind and salt in a mortar and pound until well-blended. Set aside.
2. Put the bird chilies in a mortar and pound roughly. Add Thai shrimp paste and tamarind, and then keep pounding until well mixed.
3. Add the palm sugar and chopped pork, pound until well combined.
4. Warm the oil in a pan over low heat. Add the mixture and fry until cooked and dried out.
5. Serve with fresh vegetables such as white turmeric, cucumber and winged beans.
