Laab Khom (Bitter and Spicy Minced Beef with Herb Salad)

Laab khom is made from the bile and gall of beef offal which is bitter-tasting. It is an Isaan tradition that cows are killed for important ceremonies. All parts of the cow are cooked, even its bile and gall which is served as Laab Khom. The dish is a favorite among men and always served with alcohol.


Nutrition

Beef is high in protein and amino acids, both of which are necessary for good health. The offal is high in cholesterol. The bile/gall may contain harmful bacteria and needs to be well-cooked to insure that it is safe.

Ingredient

1 kilogram sliced beef
½ kilogram sliced beef offal
1 tbsp bile and gall
2 tsp salt
2 tsp ground dried chilies
12 tbsp ground roasted rice grains
3 tbsp lime juice
2 tbsp fish sauce
2 tbsps pla-ra (pickled fish)
¼ cup thinly sliced galangal
½ cup mint leaves
½ cup sliced saw-tooth coriander
½ cup sliced spring onion


How-to

1. Mince the beef.
2. Clean the beef offal. Boil water in a pot over medium heat, add the offal and salt. Let it cook.
3. Add the pla-ra and simmering for 5 minutes. Remove the offal from the pot and cut into bite-size pieces. Keep 2/3 cup of the beef soup for the next step.
4. Stir-fry the minced beef and galangal in a pan over medium heat. Add the beef soup, and the bile/gall. Keep stir-frying until well cooked. Remove from the heat. Then add the offal.
5. Season with ground dried chilies, fish sauce and lime juice. Mix together and taste.
6. Garnish with the mint leaves, spring onion and saw-tooth coriander. Serve with vegetables.
