Spicy Herb Vegetable Soup with Prawns is made from local vegetables and herbs. It is salty and has a spicy taste from the herbs and is aromatic from the sweet basil leaves.


Nutrition

The dish is made from various kinds of local vegetables which are high in dietary fiber, vitamins, minerals, and beta carotene, but it is low in carbohydrates. It is recommended to serve the dish with cooked rice for more nutrients.

Ingredient

350 grams peeled and deveined medium-size prawns
1 cup baby corn, cut into inch pieces
1 cup snake gourds, cut into bite-size piece
1 cup pumpkin, cut into bite-size piece
½ cup hairy basil leaves
4 cups water

Ingredients for the Curry Paste
12 each black peppercorns
12 each red shallots
½ tbs. shrimp paste
½ cup dried shrimps
2 tbs. fish sauce


How-to

1. Put all of ingredients for the kaeng liang curry paste into a mortar and pound until well blended.
2. Bring water into a boil, and add the pounded mixture. Stir until the mixture dissolves. Wait for the liquid to return to a boil. Season with the fish sauce, cook a little longer, then add the prawns and the vegetables.
3. Remove from the heat when cooked. Serve in a bowl.
