Winged Bean Salad has a mild taste which is similar to Western style salads. The dish is made from winged bean, minced pork, prawns and chili paste. It is one of the most famous dishes of Thailand.


Nutrition

Winged beans are low in calories, but high in dietary fiber carbohydrates, protein, fat, calcium, phosphorus, iron, niacin and vitamins B1, B2 and C. Winged beans are a healthy food which helps the digestive system to function normally and helps prevent exhaustion and thirst.

Ingredient

2 cups winged bean, sliced on a diagonal
100 grams minced pork
6 each shrimps, deveined
¼ cup sliced red shallot
4 each sliced dried chilies, deep-fried
2 tbsp. ground roasted peanut
3 tbsp. fish sauce
3 tbsp. lime juice
1 – 2 tbsp. sugar
1 tbsp. chili sauce
2 tbsp. coconut cream


How-to

1. Blanch the chopped pork and prawns until cooked through and set aside.
2. Blanch the winged bean, and then soak in cool water. Set aside.
3. Boil the coconut cream over the low heat until thick. Set aside.
4. Put the fish sauce, sugar, lime juice, coconut cream, dried chilies and chili sauce in a bowl and mixed them together. Add the pork and prawns and stir until well blended.
5. Add the winged bean and peanut and stir. Serve on a plate and garnish with the coconut cream on the top.
