Kui Hed Lom (Stir-fried Mushroom)

Hed Lom is a member of shiitake mushroom family. It has natural good taste and smell. Stir-fried mushroom is a popular dish during raining season.


Nutrition

Mushroom is well known as healthy food which contains essential protein, 21 types of amino acid, high in vitamin 1, B2 and D which is good for bones. Eating mushrooms reduces blood cholesterol, strengthens immune system and prevents a risk of cancer. It is recommended for people living with kidney disease because the mushroom has low in sodium.

Ingredient

1 cup hed lom (a member of shiitake mushroom family)
50 grams minced pork
2 tbsp. vegetable oil
1 tbsp. chopped garlic

Ingredients for curry paste
2 each fresh green chilies (prik nhum)
3 each red shallots
5 each garlic cloves
1 tsp. shrimp paste
½ tsp. salt


How-to

1. Pound all of the ingredients for the curry paste until well blended.
2. Grill the hed lom and pound them together with the curry paste.
3. Heat the oil in a wok over medium heat. Add the pork, and stir-fry until cooked.
4. Add the curry mixture and stir-fry until mixed. Remove from the heat.
