Laab Ped (Spicy Minced Duck)

Laab Ped is one of the most popular dishes in the northeast. People in the Northeast have duck farms for eggs. When a duck cannot give an egg anymore, it will be killed for cooking. Herbs are essential ingredients to make this dish aromatic


Nutrition

Duck contain protein, fat, carbohydrate, calcium, phosphorus, and vitamin B1 and B2 which are good for lungs, kidneys, and blood. But it’s not recommended to eat regularly due to its high cholesterol content.

Ingredient

500 grams minced duck breast
¼ cup sliced lemongrass, lower tender portions
¼ cup thinly sliced galangal
3 each shredded kaffir lime leaves
1 tbsp sliced kaffir lime leaves
2 cups sliced saw-tooth coriander
1 tbsps pla-ra (boiled liquid of pickled fish )
3 tbsp lime juice
¼ cup sliced red shallot
3 tbsp fish sauce
2 tbsp sliced saw-tooth coriander
2 tsp sugar
3 tbsp ground roasted rice grains
2 tbsp sliced spring onion
2 tbsp ground dried chilies

How-to

1. Boil the water in a pot over medium heat, add the lemongrass and shredded kaffir lime leaves.
2. Add the duck, wait until roughly cooked. Remove its bone. Slice its meat.
3. Mince the meat and galangal together.
4. Add the minced duck into a pot over medium heat. Stir until well cook. Remove from the heat.
5. Season to taste with the fish sauce, lime juice, pla-ra, sugar, ground dried chilies and ground roasted rice grains.
6. Add the shallots, sliced kaffir lime leaves, mint leaves, spring onion and sawtooth coriander. Mix together.
7. Serve with vegetables.
