Loen Pu Kem (Crab Coconut Cream Sauce)

Loen Pu Kem is a kind of Thai dipping sauce made from coconut milk and salted crabs. It is creamy with a salty taste and is served with fresh vegetables.


Nutrition

The dish is full of calcium from crabs and vitamins and minerals from the vegetables. Shallot relieves stomach aches associated with flatulence. Coriander is a relaxant and tamarind is good for the excretory system. Chilies contain capsaicin which relieves flatulence.

Ingredient

3 each small salted crabs
50 grams minced pork
1 cup coconut cream
3 tbsp. sliced red shallot
2 each shredded kaffir lime leaves
1 tbsp. sliced lemongrass
2 tbsp. palm sugar
1 tsp. salt
2 tbsp. tamarind juice
1 each Thai sweet pepper, quartered lengthwise
( pale yellow green and broad in shape )
1 each chee fah chili, sliced thinly crosswise
Side dish : long beans, cucumbers, Thai eggplant and the like


How-to

1. Clean the salted crabs, and remove the end of crab legs. Cut the crabs into bite-size pieces.
2. Bring the coconut cream into a boil, and add the minced pork. Stir until well cooked. Add the red shallot, Thai sweet pepper, kaffir lime leaves and lemongrass.
3. Season with fish sauce, salt and tamarind juice. Stir for a while, and add the salted crabs and cook.
4. Garnish with Thai sweet pepper. Serve with a side dish.
