Num-Tok Moo (Spicy Sliced Pork with Herb Salad)

Num-Tok Moo has strong taste, its ingredients are similar to laab and tub wan. Pork or beef is grilled until cooked with juicy. Season with fish sauce, lime juice, toasted rice, spring onion and mint. Serve with vegetables.


Nutrition

Pork is a source of protein and iron. Red shallot is good for digestive system and contains quercetin and flavonoid glycosides preventing a risk of cancer. Mint leaves have antibiotic and contribute a cure for stomach.

Ingredient

2 tbsps slice saw-tooth coriander (phak chee farang)
2 – 3 tbsps thinly sliced red shallots
2 – 3 stalks sliced spring onion
¼ cup mint leaves
1 tbsp fish sauce
1 ½ – 2 tbsps lime juice
1 tbsp ground dried chilies
1 tbsp ground roasted rice grains

Ingredients for marinating pork
300 grams pork (blade shoulder)
1-2 tsp light soy sauce
1 tsp salt
½ tsp sugar


How-to

1. Add the light soy sauce, salt and sugar into a bowl and marinate the pork to the mixture for 15-20 minutes.
2. Grill the pork over low heat until returns to brown and the meat still keeps juicy.

Directions
1. Slice the grilled pork and set in a bowl. Season with fish sauce, lime juice, sugar, chilies and roasted rice. Mix together.
2. Add the saw-tooth coriander, spring onion and mint leaves, mix thoroughly.
3. Serve with vegetables.
