Panaeng Nuea (Thick Red Curry with Beef)

Thick Red Curry with Beef is influenced by the Indian cuisine. Its main ingredients are spices and herbs such as chilies, galangal, lemongrass, coriander root, fennel seed, coriander, garlic and salt.

The dish is high in protein from the beef and has a moderate amount of good fat from the coconut milk. Having the dish provides energy to the body. The herbs help relieve colic flatulence.

Ingredient

250 grams beef, slice into bite-size piece
150 grams coconut cream
200 grams coconut milk
30 grams panaeng curry paste
1 tbsp. fish sauce
15 grams palm sugar
5 grams sliced red chee fah chilies
2 leaves slice kaffir lime leaves


How-to

1. Simmer the coconut cream over medium heat until the oil separates. Add the panaeng curry paste and cook until it gives off a fragrance. Add the beef and cook through, then gradually add the coconut milk, bit by bit.
2. Season with fish sauce and palm sugar, Once the beef is cooked, keep simmering until thick.
3. Serve on a plate. Garnish with the sliced kaffir lime leaves and red chee fah chili.

Tips
If marble beef is preferred, simmer it for a longer time in the coconut milk to tenderize it.
