Som Tom Pu (Spicy Papaya Salad with Salted Crab)

Som Tum Pu is a simple dish with high nutrition values. The cooking technique is simple. Just mix papaya and vegetables together and season with pla-ra and fish sauce. Serve with local vegetables.


Nutrition

Som Tom Pu has high in vitamins and minerals. Papaya contains proteolytic enzyme (Protease) which is the digestive enzyme needed to digest protein. Lime juice and tomatoes are high in lysine, an essential amino acid. The dish is not cooked over heat so it is important to insure all of the ingredients are clean.

Ingredient

1 cup shredded papaya
3 each garlic cloves
5 – 6 each bird eye chilies or dried chilies
2 each Sida tomatoes, halved
2 each salty crabs (pu-kem)
1 each long bean, cut into 1-inch pieces
1 tbsp boiled pla-ra liquid
1 tbsp fish sauce
2 tbsp dried shrimps
¼ cup lime juice
1 tbsp palm sugar


How-to

1. Pound the chilies, dried shrimps and garlic in a mortar, add the long bean and pound 4 - 5 times.
2. Add the tomatoes, the lime juice, palm sugar, fish sauce and pla-ra. Pound until mixed.
3. Add the papaya and the salty crab. Pound lightly until mixed. Taste.
4. Serve with vegetables.
