Tom Saeb Moo (Spicy Soup with Pork)

Tom Saeb Moo is a delicious dish of tender pork in a spicy curry. The soup is aromatic from the herbs. The loin can be replaced with ribs of pork or fresh ham.

The dish provides high protein and energy. The saw-tooth coriander contains dietary fiber, calcium, iron, potassium, iodine, vitamins A, B1, B2, B3 and C, chlorophyll, folic acid and mucilage.

Ingredient

200 grams pork (loin)
2 stalks lemongrass, cut into 2-inch long and crushed
5 each kaffir lime leaves
¼ cup sliced young galangal
¼ cup chopped saw-tooth coriander (phak chee farang)
20 each bird eye chilies
3 tbsp ground roasted rice grains
2 tbsp fish sauce
2 tbsp lime juice
3 cups stock


How-to

1. Clean the pork and cut into bite-size pieces.
2. Boil the stock in a pot over moderate heat, and add the lemongrass, galangal and kaffir lime leaves. Let the stock return to a boil.
3. Add the pork, and simmer until the stock begins dry out. Season with fish sauce and lime juice. Add the chilies, toasted rice and saw tooth coriander leaves. Let it boil again.
4. Remove from the heat.
