Phak Lieng Tom Kati(Melindjo Leaves in Coconut Milk Soup)

Lieng or Melindjo, a local tree of the South. is 1-2 meters tall and has long leaves. Its young leaves are cooked in different dishes like stir-fried egg and prawn in coconut milk curry. Lieng leaves in coconut milk soup is a favorite dish among people in the South.


Nutrition

Lieng leaves are rich in beta carotene which is an antioxidant and provides vitamin B, calcium and phosphorus. Having the dish helps eyesight, nourishes the skin and maintains bones and teeth. Coconut milk has moderate fat which helps digestion and stimulates the thyroid gland to work better which is good for burning fat.

Ingredient

100 grams Phak Lieng (Melindjo), young leaves
1 cup coconut cream
1 tsp. white peppers
3 each red shallots
1 tsp. good shrimp paste
2 tbsp. good dried shrimps
Sugar to taste


How-to

1. Clean Phak Lieng, and drain well. Set aside.
2. Pound the peppers, shrimp paste and dried shrimps in a mortar until well blended. Add the red shallots, pound until well mixed.
3. Warm the coconut cream in a sauce pan over low heat. Do not turn up the heat otherwise the coconut oil will separate. Add the pounded mixture, sugar to taste and Phak Lieng, wait for a few minute or until the vegetables are cooked.
4. Remove from the heat. Serve in a bowl.
