Stir-Fried Pork Ribs with Curry Paste has a strong, spicy taste. It is made from pork ribs and curry paste that is stir-fried until it is dried out. It is a rich dish that can be placed in a small package and taken along while raveling.

Pork ribs contain protein, vitamins A and B1, Niacin and iron. Finger roots are high in calcium, iron, minerals, and vitamins A and C. Pepper contains phenolic and Piperine which are antioxidants and alkaloid, which reduces the risk of Alzheimer's disease and cancer.

Ingredient

300 grams pork ribs, cut into bite-size piece
2 tbsp. gaeng kua curry paste
4 each shredded kaffir lime leaves
¾ cup sweet basil leaves
2 tbsp. sliced finger root
3 stalks young green peppers
½ cup chee fah chilie, sliced
1 tsp. sugar
1 tbsp. fish sauce
2 tbsp. vegetable oil
½ cup stock


How-to

1. Warm the oil in a pan over medium heat, add the Gaeng kua curry paste and stir fry until aromatic
2. Add the pork ribs, stir-fry for a minute. Add the stock, keep stir until cooked.
3. Season with fish sauce and sugar, and taste. The dish is a nice blend of mild salty and sweet.
4. Add the finger root, kaffir lime leaves, peppers and the chee fah chilie. Stir-fry until it becomes aromatic. Add the sweet basil, and stir-fry briefly. Remove from the heat. Serve on a plate.
