Bai Lieng Pad Kai(Stir-Fried Malindjo Leaves with Egg)

“Lieng” or Malindjo, a local tree of the South. is 1-2 meters tall and has long leaves. Its young leaves are cooked in different dishes like stir-fried egg and prawn in coconut milk curry.


Nutrition

Lieng leaves are rich in beta carotene which is an antioxidant and provides vitamin B, calcium and phosphorus. Having the dish helps eyesight, nourishes the skin and maintains bones and teeth.

Ingredient

100 grams lieng leaves (Melinjo)
2 each eggs
10 minced garlic cloves
2 tbsp. vegetable oil
1 tbsp. fish sauce
2 tbsp. oyster sauce
A small amount of sugar


How-to

1. Clean and trim the lieng leaves.
2. Heat the oil in a pan over medium heat, wait until it becomes hot, and then add the chopped garlic. Fry until it turns golden brown.
3. Add the lieng leaves, and season with the oyster sauce, fish sauce and sugar. Stir-fry until well mixed.
4. Crack the eggs in the pan, wait until the bottoms are cooked, turn and cook until done. Stir-fry for a couple more minutes. Turn onto a serving plate.
