1 each catfish, medium size
1/2 cup Thai eggplants, cut into bite-size pieces
3 – 4 stalks spring onions, cut into 1 inch pieces
¼ cup sliced cabbage
¼ cup hairy basil leaves
½ cup dill
2 tbsp pla-ra (pickled fish)
2 tbsp fish sauce
Ingredients for curry paste
7 – 10 each bird eye chilies
3 each red shallots
2 stalks sliced lemongrass, lower tender portions
How-to
1. Pound all the spices together briefly.2. Clean and gut the catfish. Cut into bite-size pieces.
3. Boil the water in a pot over medium heat, add the chilies. Let them come to a boil.
4. Add the pla-ra, wait for it to return to a boil. Add the eggplants, cabbage, dill and catfish.
5. Season with the fish sauce. Add the spring onion and hairy basil leaves. Remove from the heat. Serve in a bowl.
