Jao Bong is a staple dip of the Northeast. Ingredients of Jao Bong comprise of galangal, lemongrass, kaffir lime leaves, chilies, garlic, shallot and pla-ra (pickled fish). Ii has trong taste of spicy and salty. The dish is stored for many days outside a refrigerator .

Jao Bong is a healthy food due to its ingredients comprising of herbs. Galangal relives flatulence and phlegm, dysentery, bronchitis and asthma. Lemongrass contains vitamin B1 and B2, calcium, dietary fiber, phosphorus, calcium and iron. It helps to relieve low back pain, supports digestion. Kaffir lime leaves help passing gas in the intestines, contribute a cure for colic, giddy synonyms.

Ingredient

1. 1 cup pla-ra (picked fish made from snake-head fish)
2. 10 thinly sliced red shallots
3. 20 sliced bird eye chilies
4. 2 stalks thinly sliced lemongrass
5. 2 tablespoons thinly sliced kaffir lime leaves
5. 4 tablespoons kaffir lime juice
6. 2 tablespoons minced galangal


How-to

1. Clean the pla-ra and remove bones.
2. Mince pla-ra meat, add the galangal, kaffir lime leaves and lemongrass. Keep mincing until it is well blended.
3. Put the mixture in a bowl. Add the kaffir lime juice, shallots and bird eye chillies. Mix together.
4. Serve with vegetables like cucumbers, long beans and eggplant.
