Gaeng Nuea Fak-Thong is simple dish. Its taste comes from natural ingredients: sweetness from the pumpkin, salt from the pla-ra (pickled fish) and the flavor of spice from the hairy basil leaves.
NutritionPumpkin is high in vitamins A and C, phosphorus, calcium and carbohydrates. Beta carotene in the pumpkin has antioxidants which reduces the risk of cancer, stroke and heart attack.
2 cups pumpkin, cut into bite-size pieces
300 grams sliced beef
½ cup hairy basil leaves
3 tbsp fish sauce
1 tbsp pla-ra (pickled fish)
3 cups water
Ingredients for curry paste
3 dried chilies
1 stalk thinly sliced lemongrass
4 red shallots
How-to1. Pound all of the ingredients for the curry paste until a paste is formed.
2. Boil water in a pot over medium heat. Add the curry paste, stir until it dissolves. Add the beef and simmer until it is well-cooked.
3. Add the pumpkin, cooking until tender.
4. Season with fish sauce and pla-ra. Add the hairy basil.
5. Remove from the heat. Serve in a bowl.
