Prik - Nhum, or green chilies, have a green color that never changes. They are larger than chee-fah chilies but smaller than bell-peppers.

Green chilies contain calcium, phosphorus, iron and vitamins A and C. The green chili dipping sauce is good for the digestive system, restrains the growth of bacteria, and reduces blood cholesterol. The dish is recommended to people catching a cold.Ingredient
5 each green chilies (prik nhum)
5 each garlic cloves
8 each red shallots
½ tsp. salt
½ tbsp. sliced coriander leaves
½ tbsp. sliced spring onions
Side dish : pork snack / pork cracking (deep-fried pork-skin) and local vegetables
How-to
1. Roast the chilies, garlic and shallots, then peel them.2. Pound all of spices and salt until well blended.
3. Serve in a bowl. Garnish with the coriander leaves and spring onions.
Tips
Grill all of the ingredients over medium heat of charcoal; it will make them more aromatic. Remove the seeds and membrane from the chilies if you want to reduce the heat generated.
